Saturday Brunch- Pudas

Savory gram flour pancakes. Easy to make, nutritious and light.


1 cup gram flour
1/4 cup rice flour (optional- substitute with 1/4 cup gram flour)
1 cup shredded vegetables ( Zucchini, yellow squash, carrots, onions- you can mix and match any vegetables you like. I use grated broccoli stalks and a carrot. )
2 tbsp shredded cilantro
1 tsp salt
1 finely chopped green chilli pepper
1 tsp ground cumin
1 cup water

– Mix all ingredients together in a large bowl with a whisk. Do not squeeze water out of the veggies before you add them. Let the batter stand for ten minutes.
– Heat a non-stick griddle. Spray with cooking spray/oil of choice/butter.
– Pour a ladleful (1/6th) of the batter on the griddle, and spread it out in a round. Let it cook on one side, then flip and cook on the other side until well browned. Repeat for five more pancakes.
– Serve with cilantro-mint chutney and tea.

Makes six pancakes- approximately 100 Cals each, 1.2 gm fat, 16.1 gm carbs, and 4.3 gm protein.

  3. that's a fantastic idea!I never would have thought of putting shredded veg in pancakes!I wonder if it would work with Bisquik…

    There is no reason it wouldn't..the flavor of gram flour, though, is quite different from regular pancake mix..

  6. I've been bookmarking your recipes like crazy in the past 20 minutes. These gramflour pancakes are too good to miss. Your family are really lucky to have you taking care of their meals.

    Gram flour/ Besan is available in all Indian grocery stores.

    Ha ha..I hope they feel lucky, and not like guinea pigs for food! These pancakes are not fluffy (no leavening agent), so they're more like Indian flatbreads..and eaten as such. Great for breakfast.
