The Grit Restaurant Golden Bowl

My variation of the famous bowl, anyway.

1 cup raw rice, cooked (use white or brown)

White Sauce

1 tbsp butter
1 tsp flour
3/4 cup milk
1/4 cup nutritional yeast flakes
1 tsp soy sauce
1 tbsp chopped cilantro
salt and black pepper to taste

In a heavy saucepan over medium heat, melt the butter. Stir in flour until mixture begins to bubble. Add milk gradually, mixing continuously with a whisk. Add the nutritional yeast. The mixture will quickly become thick. Add soy sauce and cilantro and turn off the heat. Add salt and pepper to taste.

Tofu

1 tbsp canola oil
1 block firm/extra-firm tofu, diced
1 tbsp soy sauce

Lightly oil a non-stick skillet and place over high heat. Allow oil to heat slightly, and add tofu. Saute until golden brown. Sprinkle with soy sauce and saute for another minute.

Sauteed Veggies

1 tbsp canola oil
1 tsp sesame seeds
1 tbsp ginger green chili paste
4-5 cups chopped vegetables of your choice (bell pepper, onions, mushrooms, broccoli, carrot, daikon, squash)
1 tbsp each apple cider vinegar and soy sauce(optional)

Heat oil over high heat. Add sesame seeds, ginger, green chillies, vegetables of your choice (we used broccoli, daikon, zucchini) and saute until cooked but still crunchy. Add vinegar and soy sauce, if you like. Add the tofu to the veggies and mix well.

Spoon rice into a bowl, top with veggies, tofu, and sauce. Serve.
