Five servings of vegetables and a tablespoon of oil. Inspired by the Vegan with a Vengeance.
Puree together —
– 1 cup frozen peas ( thawed and zapped in the microwave, 2-3 mins)
– 1/2 cup frozen green beans ( ditto)
– a handful of chopped chives
– about 10 basil leaves
– 1 tbsp lemon juice
– 1/4 cup roasted almonds
– 5 kalamata olives ( the kind packed in oil)
– salt to taste
In a saute pan, add 1 tbsp of oil.
– Saute 1 cup broccoli florets until browned.
- 1/2 cup cooked fusilli pasta
Top with shaved parmesan and serve. Serves one (and a half, maybe).
