What fruits and vegetables are in season where you live? Have you incorporated them into your recipes?
Autumn cranberries – we made a glorious Vegan Cranberry cornbread.
Pre-heat oven to 350 degrees.
Mix 1 and 1/4th cup all-purpose flour with 3/4th cup cornmeal.
Add 1 and 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 cup sugar,1 tsp salt. Mix all dry ingredients together.
Add 2 and 1/2 tbsp ground flax seeds whipped with 3 tbsp water ( replacing one egg).
Add 1/3 cup canola oil, 3/4th cup orange juice, and 1 tbsp orange zest.
Mix everything together. Add more orange juice if needed until mixture looks like cake batter.
Fold in 1 cup chopped cranberries and 1/4th cup chopped walnuts(optional).
Put mixture in a greased nine by five pan and bake for an hour or until a toothpick comes out clean.
Cool a little, then remove bread and cut into thick slices.
Serve with apple butter and hot tea.
